Andalusian Flamenco Eggs

This dish is very typical and appreciated in Andalusian cuisine and uses this main ingredients: tomatoes, vegetables and eggs, if they are free range, much better. Some people might use chorizo, ham or bacon… any type of meat would add a nice touch of flavour, which is really good. This is our recipe for flamenco eggs:

To get a 100% homemade flavour, we recommend that you make the fried tomato yourself, and that you cook it in a clay pot. It can be made in other types of containers, but when cooked in a clay pot you get a very rich homemade taste.
